Preheat oven to 180 degrees and grease a pudding mold
Beat the eggs with sugar until the mixture is creamy
Add the oil, zest and orange juice and mix well
Incorporating the essence of vanilla
Sift the flour with baking powder and salt and add little by little to the previous mixture
Add the grated carrots and gently mix until all integrated
Pour the dough into the mold and smooth the surface
Bake for 40 to 45 minutes or until inserting a chopstick this comes out clean
Let it cool before de-molding and serving
You can accompany it with an orange icing topping or whipped cream if you wish
